Kiwi Parfait — Medical Weight Loss Clinic


Kiwi Parfait

Servings:
1 Fruit
1 Starch
1 Dairy

Suitable for all Freedom meal plans only

Ingredients:
1 small Kiwi
6 oz. Low-Fat Yogurt (or 4 oz. Greek Yogurt)
¼ cup Quinoa, cooked
Dash of Cinnamon (to taste, optional)
Lime Zest
1-2 drops Vanilla Extract
½ tsp. fresh Mint, chopped

Preparation:
Puree half of the Kiwi and set aside. 

In a small bowl, combine the yogurt, lime zest, vanilla extract and cinnamon (optional).

Fold the pureed kiwi into the yogurt mixture. Layer the yogurt, quinoa, and remaining diced kiwi in a small glass and garnish with chopped mint.
